With these two fun facts in mind, can you even imagine how many people ask us what we eat during the holidays? Hmm, the million dollar question: What do hangry vegetarians eat when they don’t eat turkey or ham?
HELLOOO PEOPLE, the holidays are allll about the sides (and the leftovers, of course). You better believe we load up our plates with salad, sweet potatoes, veggies, cranberry sauce, green bean casserole, rolls and mashed potatoes galoreee.
So let’s start with the salad. Who wants to reach for the healthy stuff when there’s so many other options on the table? For us, gobbling up a bowl of salad is eeeasy—but this isn’t the case for everybody.
Salad dressing can make or break a bowl of greens like nobody’s business. Especially when you’re desperate to get your little ones (and possibly your significant other, too) to eat more greens, a good salad dressing can be the solution.

If you’re like us, you definitely buy a few extra bags of lettuce and veggies, “just to be safe!” But, since there’s so much to nibble on, you rarely end up refilling the veggie tray or the salad bowl. So what do you do with all of this produce that will expire in a few days?? Just add Drew’s!
We chopped up some leftover veggies, added the lettuce, threw in some cheese, topped it with some nuts and then finished it off with Drew’s Organics Classic Italian Salad Dressing. If you’re a meat eater, feel free to top it with some turkey too. And if you have some extra tortillas in the pantry, make yourself a veggie wrap! The possibilities are endless.
Now for our absolute favorite holiday leftover meal… POTATO WAFFLES!
Here’s how to make them:
Ingredients:
- 3 cups leftover mashed potatoes
- 1 cup shredded cheese
- 1 Tbsp. Drew’s Organics Honey Dijon Salad Dressing
- ¼ cup milk of choice
- 1 Tbsp. avocado oil
- 2 chia eggs (1 Tbsp. chia seeds + 2.5 Tbsp. water)
- 1 Tbsp. chopped scallions
- ½ cup flour
- Drew’s Organics Creamy Ranch Salad Dressing, for serving
Directions:
- Preheat the waffle maker, and spray with cooking spray.
- In large bowl, mix together milk, oil, Honey Dijon salad dressing and chia eggs.
- Stir in cheese, scallions and mashed potatoes.
- Fold flour into the mixture until well combined.
- Scoop mixture into waffle maker, and spread evenly. Close the waffle maker and cook until green light comes on.
- Repeat with leftover mixture.
- Top the waffles with Drew’s Organics Creamy Ranch Salad Dressing, or use it as a dipping sauce!
