Skinny Pumpkin Pie Bites

If you need an app or dessert to bring to a party but you’re a bit of a klutz in the kitchen, this recipe’s for you. It’s got just a few simple ingredients, and it’s nearly impossible to screw up.

To make these tasty little Pumpkin Pie Bites, you just have to whisk together pure pumpkin purée, one egg, a tiny bit of almond milk, maple syrup and a few simple slices, then spoon the mixture into wonton wrappers that you’ll place in the cups of a mini muffin tin. That’s it! Then just pop them in the oven for 10-12 minutes or until the wrappers are firm and golden brown.

These really are the perfect finger food to bring to a gathering because they look adorable, taste delicious, and can be enjoyed hot or cold. Look at you, chef!

Ingredients:

  • 1 cup pure pumpkin puree
  • 1 egg
  • ½ tsp. pure vanilla extract
  • 2 Tbsp. pure maple syrup
  • 1 tsp . ground cinnamon
  • 1 tsp. ground ginger 
  • 1 tsp. ground cloves
  • cup unsweetened vanilla almond milk
  • 24 wonton wrappers

Directions:

1. Preheat oven to 325 degrees.

2. In a medium size mixing bowl, combine all ingredients and whisk until blended.

3. Spray a mini muffin tin with cooking spray then place a wonton wrapper in each cup.

4. Divide pumpkin mixture across each muffin cup.

5. Bake for 10 to 12 minutes or until wrappers are crispy and golden brown in color.

Makes 24 mini bites.
