Now you can savor the season’s most popular flavor without all the guilt, thanks to these easy Pumpkin Chocolate Chip Cookies featuring pumpkin purée, oats, mini chocolate chips, maple syrup and a few simple spices.

They take minutes to make (they’re even easier when little hands are around to help!), they’re delicious, and they are pumped full of nutrition like fiber and vitamins A and C. So basically, they’re a tasty trifecta you won’t feel guilty enjoying.

Ingredients:

  • 2 cups pure pumpkin
  • 2.5 cups oats
  • 2 Tbsp. maple syrup
  • 2 Tbsp. stevia
  • 1 cup mini chocolate chips
  • Cinnamon, pumpkin pie spice, nutmeg to taste

Directions:

1. Preheat oven to 325 degrees.

2. In a large mixing bowl, combine ingredients and stir until well blended.

3. Roll batter into golf ball sized balls, place balls on a greased baking sheet, then use the back of a spoon to smush into flat cookies.

4. Cook for 10-12 minutes or until hard, flipping halfway through.

Makes 16 cookies.
