It’s hard to say what’s better: The delicious taste of this surprisingly healthy Banana Nut Bread, its seriously SOFT, bread-like texture, or the sweet cinnamon-y smell that fills the house as it bakes.
The good news is you don’t have to decide. Just like you don’t have to make a choice between food that tastes good and food that’s good for you when you have this tasty treat on the menu. With this delicious Banana Nut Bread, you don’t just get a sweet and satisfying treat, you also get potassium, fiber, healthy fats and a bunch of other body-boosting vitamins and minerals.
The recipe is super simple–the most complicated part is crushing the cashews, which can be done by tossing the nuts in a sandwich bag then using your fists or the back of a spoon to break them into small pieces. Other than that, it’s just a matter of mixing all the ingredients then pouring them into a parchment-lined baking dish and sliding them into the oven. That’s it!
Oh, and if you don’t like raisins or cashews, feel free to omit them or to use something in their place (we tried dried cranberries and slivered almonds and loved them, too!). You can even add mini chocolate chips to transform this Banana Nut Bread into more of a dessert dish.
