Two-Ton Chocolate Pizza

Warning: This chocolate pizza is definitely not for the faint of heart… or stomach.

And if you’re looking for a healthy dessert recipe, it’s most definitely not for you, either (we’ve got plenty of those in our Recipe section!).

Pizza crust recipeThis ridiculous dessert was inspired by my husband, who is sweet enough not to tell me that he’s a little tired of my “healthy in disguise” desserts. You know, the pies with the crust made out of dates and cashews, and the cookies that use bananas and oats instead of sugar and flour.

This chocolate pizza does not dish out tons of nutrition, nor does it sneak in any healthy ingredients, much to my husband’s delight (check out my Chocolate Avocado Pudding recipe if you want to know that story…). Nope. This dessert is exactly that – dessert. It’s based off of our Scotcharoo recipe, using brown rice crisp cereal and peanut butter as the crust, and melted chocolate with coconut oil as it’s “sauce.”

As for the toppings? You can use whatever your Dessert pizzalittle heart desires. For this version, I used chocolate covered coconut candies from one of our favorite brands, Little Secrets, vegan mini marshmallows and mini hard pretzels. At the request of my husband, who was quite pleased with this “real dessert,” I have since made this chocolate pizza a few more times, and each time I changed up the toppings. I made a Christmas chocolate pizza with a dark chocolate sauce and toppings consisting of pieces of candy canes and chocolate covered peppermint and gingerbread candies. I’ve even made a version with M&Ms and crumbled potato chips (again, this is a total departure from my usual healthy treats). And I’ve made a healthier version with fruit. I’m pretty confident that whatever you decide to top your chocolate pizza with will be delicious. I would just recommend making it as close to the serving time as possible. Because having this insanely indulgent dessert sitting in your fridge is even more tempting than eating leftover cheese pie for breakfast.

Ingredients:

  • 1 jar peanut butter
  • 5-6 cups rice crisp cereal
  • 1/2 cup agave nectar
  • 1.5 bags chocolate chips
  • 1 tsp. coconut oil
  • Toppings: Mini marshmallows, small hard pretzels, chocolate candies like M&Ms

Directions:

1. Line two pizza baking pans with parchment paper (this recipe makes enough for one 11 inch and one 10 inch pizza).

2. Combine peanut butter and agave in a large bowl then microwave for 30 seconds. Stir till combined.

3. Stir in brown rice crisps.

4. Spread mixture evenly across pizza pans. Place in fridge to set.

5. Combine chocolate chips and coconut oil then microwave in 30 second intervals until chocolate chips are completely melted. Stir to blend.

6. Spread chocolate mixture evenly across “crust.” Let sit for five minutes so chocolate cools but doesn’t harden.

7.  Add desired toppings and place in fridge until serving.
