Who said S’mores have to be reserved for the summer months? Not us! On the hunt for a way to duplicate our favorite summer staple minus the outdoor fire, we came up with these super simple s’mores cups.
They require just four easy ingredients – chocolate chips, coconut oil, graham crackers and marshmallows. We wanted to make ours vegan so we used Lily’s dark chocolate chips, Dandies mini marshmallows and vegan graham crackers. The result was so delicious and so reminiscent of summer days, we almost forgot it’s the dead of winter… almost.
The best part is that these s’mores cups don’t require an oven. You simply melt the chocolate chips and coconut oil, crush some graham crackers into the mixture, pour the mixture in your muffin tin with some mini marshmallows in the middle, then top them with more crushed graham crackers and marshmallows then pop them in the fridge to set.
They’re seriously so easy to make and so delicious to eat, they are the perfect thing to bring to parties and gatherings. Just leave them in the fridge until you’re ready to head out so they don’t melt (they are fine to sit out, but after a while will soften up).
Ingredients:
2, 10-ounce bags of chocolate chips (we prefer dark chocolate, but milk chocolate works just as well).
2 tsp. coconut oil
4-6 graham crackers
48 mini marshmallows
You’ll also need a mini muffin tin and cupcake liners.
Directions:
- Combine chocolate chips and coconut oil in a microwave-safe bowl then heat and stir in 20-second intervals until completely melted.
- Line a mini muffin tin with cupcake liners and place one marshmallow in each cup.
- Crumble graham crackers into tiny chunks, reserving a few pieces for topping, and stir into chocolate mixture.
- Pour chocolate mixture over marshmallow in each muffin cup.
- Place one marshmallow in top of chocolate mixture then sprinkle with graham cracker crumbs and place in fridge to set.
Makes 24 s’mores cups.
