I put the “avocado” in parenthesis for a reason: You will have absolutely no idea it’s made its way into this chocolate pudding recipe. My husband, who wouldn’t touch an avocado with a 10-foot pole, loves this creamy, sweet dessert (of course, I haven’t told him there are avocados in it!).
This pudding is a staple on my weekly menu. It’s so sweet and creamy, but it’s also not half bad for you. Avocados, as we all know by now, are packed with healthy fats. But they’ve also got folate, vitamins C, B6, E and K. And, when you top this rich and seemingly indulgent pudding with fresh fruit, chia seeds or nuts, you get even more nutrition out of your bowl.
Ingredients:
- 2 medium, ripe avocados, peeled and pitted
- 1/2 cup unsweetened cocoa powder
- 1/4 cup unsweetened vanilla almond milk
- 1 tsp pure vanilla extract
- 4 Tbsp agave nectar
- Toppings of choice
Directions:
- Blend all ingredients in food processor.
- Leave in fridge overnight to set.
