When I tell you Ben can eat, I mean Ben can EAT. This kid will polish off three bowls of rice and beans and still reach for the spoon. And now that he’s discovered his pincer grasp, all he wants are foods he can double fist and shovel into his cute little mouth.
While I’m certainly glad that he isn’t a picky eater, I am on a never-ending quest for finger foods that will satisfy his insatiable appetite while delivering all the nutrition I know he needs.
This recipe came about after a recent visit to a friend’s house, when Ben went through the solids I packed in a matter of minutes and we had to tap into her supply. She had some heat-and-eat pancakes on hand, and he went CRAZY for them.

When we got home, I decided to try my hand at making him some healthy pancakes from scratch. Since his two favorite foods (at least this week) are eggs and bananas, I decided to combine the two, along with some fresh strawberries and chia seeds, to see if I could replicate the pancake concept with a little more nutrition.
The result? A delicious, hearty breakfast he absolutely loved. The recipe made three good sized pancakes, which were more the texture of crepes than traditional thick pancakes. They’re loaded with protein, fiber, potassium, vitamin C and healthy fats, making them a nutritious option for Ben, and they’re so tasty, he happily devoured them. Plus, it was nice that he was able to feed them to himself so I could eat my own breakfast (although if I’m being completely honest, I ate half of his since they were so delicious!).

I’m really excited about this recipe because it’s easy to throw together and it’s easy to customize. Next time, I’ll make the pancakes with blueberries and flax seeds, and top them with a little almond butter or yogurt. I bet they’d also be delicious with chopped pineapples or peaches.
Here’s how to make these delicious Strawberry Banana Pancakes:
Ingredients:
- 1 medium banana
- 2 eggs
- 1/4 cup chopped strawberries
- 1 Tbsp. chia seeds
Directions:
- Use the back of a fork to mash the banana
- Stir in the eggs, whisking until well blended with the banana
- Add the chopped strawberries and chia seeds
- Pour 1/3 of the batter into a saucepan on medium heat. Flip until solid and cooked through. Repeat with remaining batter.
