Blueberry Lemon Oatmeal Bake

Like most oatmeal bakes, this Blueberry Lemon breakfast has to be one of the easiest make-ahead meals there is. All you have to do is dump a few easy ingredients in a bowl, mix them up, pour them in a baking dish and bake them till they’re firm enough to sink your fork or spoon into. That’s it.

Oatmeal bakes aren’t just easy-they’re healthy, too. They’re loaded with fiber thanks to the oats and fruit, plus they’ve got healthy fats and protein courtesy of the nuts and chia seeds. We love how versatile they are-you can use the same base and change up the fruit and nuts and voila! A whole new flavor of oatmeal bake. This is especially awesome because it means you can use whatever fruit is in season (we can’t wait to make a peaches and cream version once peach season rolls around again!).

This Lemon Blueberry version is literally bursting with blueberry flavor. Plus it’s got a hint of lemon that adds just the right amount of tang, and a bit of shredded coconut for some extra sweetness. And the cashews adds the perfect amount of crunch to this otherwise soft dish.

Here’s how to make this delicious Blueberry Lemon Oatmeal Bake:

Ingredients:

  • 2 cups old fashioned oats
  • 2, 6 oz. containers fresh blueberries
  • 1/4 cup maple syrup
  • 1 1/2 cups unsweetened vanilla almond milk
  • 1/2 cup cashews
  • 1 egg or 1 chia egg (1 Tbsp. chia seeds and 3 Tbsp. water)
  • 4 tsp. Stevia
  • 1/3 cup shredded coconut plus extra for topping.
  • Juice of 1 lemon plus grated peel for topping

Directions:

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, combine all ingredients until well mixed.
  3. Pour mixture into greased 8×8 baking dish then bake for 25-35 minutes or until center is firm.
