The Best Veggie Burger Recipe You’ll Ever Try

This veggie burger recipe came about as a total accident. After nearly suffering a heart attack watching Ben choke down a rice and beans dish I had made him, I decided he wasn’t ready for such little pieces. I decided to try blending them together in the food processor and forming them into a patty that could be broken up into bite-sized pieces.

But what started as a finger food for my 10-month-old son quickly became a staple meal in my house. That’s because these veggie burgers are seriously UNREAL.

With six simple ingredients, they’re so, so easy to make, and the recipe makes six to eight patties (depending on how thick you like your veggie burgers), which means they make for a great family meal–or a delicious, easy meal you can pop in the microwave and enjoy all week.

By adding grated carrots and finely chopped spinach, I pumped up the flavor and the nutrition. And, because I’m extremely picky about black bean burgers, I replaced the beans with lentils. The end result was so delicious, I literally make these every week.

And even Nick, who is the pickiest eater I know, loves these things. He likes topping them with cheddar cheese, lettuce, tomato and a pickle, then adding them to a thick hamburger bun. I like adding mustard and Swiss cheese. I’ve also tried spreading red pepper hummus on them and eating them bun-less, and have crumbled them up and tossed them on top of a salad. I have yet to discover a use for these veggie burger patties I didn’t like.

And as for Ben? He absolutely loves these veggie burgers. Which is great, because they’re packed with nutrition the little guy needs–fiber, iron, protein, vitamins C and A, potassium, folate and manganese.

Here’s how to make the best veggie burger ever:

Ingredients:

  • 1 cup cooked rice
  • 1 cup cooked green lentils 
  • 1/2 cup flour (I used oat because that’s what I had)
  • 1/2 cup finely chopped spinach
  • 1/2 cup shredded carrots
  • 1 tsp. Italian seasoning
  • Optional: Hamburger bun, lettuce, tomatoes, avocado, cheese. pickles and mustard, ketchup or hummus

Directions:

1. Preheat the oven to 350 degrees.

2. Blend all ingredients in a god processor until smoothie.

3. Form mixture into burger sized patties and place on greased baking sheet.

4. Cook for 10-12 minutes, flipping halfway through.

5. Add to bun with desired toppings.
